I sometimes feel like a bit of a fraud posting smoothie recipes, because they’re just so simple, and yet I can’t resist sharing this one. Its creation was a bit of a fluke, but it’s truly delicious.
Last weekend we were having (a somewhat rushed) breakfast before driving up to Scotland for the wedding of two good friends, and so I quickly threw some ingredients that we had lying around – half a punnet of raspberries, the dregs of a carton of coconut milk, a frozen banana -into the blender. I would never have thought to combine raspberries and coconut, but wowzah, do they work together! The addition of baobab powder and a splash of lime introduces just enough of a citrus edge to balance the sweetness, and takes this smoothie to a whole new level of yum.
This recipe makes enough for two small glasses or one larger portion. Enjoy!
Ingredients
1 banana (pre-chopped and frozen)
A good handful of raspberries
2 tsp Aduna baobab powder
Squeeze of lime juice (approximately from a quarter of lime, depending on juiciness)
300ml Coconut Milk
Method
- Add all of the ingredients to the blender and blitz until smooth and frothy.
